Whisky Sommelier (Bascule) · Current · 2025-11
Pros: Bascule houses one of the world's largest whisky collections and I genuinely learn every shift. The guests are passionate about whisky, the conversations are extraordinary. Tips are excellent from the international clientele.
Cons: The knowledge expectation is enormous, guests sometimes know more than you do which requires humility and constant study. The bar is intimate which means your mistakes are very visible.

Head Waiter (Signal Restaurant) · Current · 2025-10
Pros: The Signal Restaurant is one of Cape Town's finest. The view over the marina changes every day. The team is exceptionally close-knit. International guests bring extraordinary energy.
Cons: December in the Waterfront tests every team member to their limit. The expectations at this level are uncompromising.

Pros: Luxury spa environment with excellent equipment. Guests are generous tippers. The property is beautiful and the team culture is warm.
Cons: Full days of back-to-back treatments are physically demanding. Waterfront transport costs add up.
