Pros: The sourdough and croissant programme at Jason Bakery is the best in South Africa. I've learned more in 6 months here than in 2 years at other bakeries. Free bread and pastry daily is an extraordinary perk. The Cape Town food community knows Jason Bakery and it opens doors.
Cons: 4am starts are non-negotiable in a serious bakery. Pay is not commensurate with the skill level. The CBD location means finding affordable transport at that hour is challenging.

Pros: Creative latitude in pastry is excellent. Jason has strong views on quality and ingredients, working with only the best teaches you to taste and think at a higher level.
Cons: Early starts are physically demanding long-term. Weekend pastry demand is very high.
